Ma'amoul

filled date biscuits from the Middle East

Ingredients:

Dough: 

-280g white flour

-20g powdered sugar

-200g of butter

- 1 tablespoon of cold water

- 1 tbsp rose water 

Filling: 

-450g pitted dates

-1 tsp cinnamon

- a little   ground clove (only as needed)

-125g tree nuts

- 30 g  icing sugar 

Recipe: 

Preparation:

Preheat the oven to 180°C (convection)

cut the butter into cubes and chop the walnuts

Dough:

  1. Mix the flour, the  icing sugar and the butter until you have a crumbly mixture

  2. Add the water and rose water and mix until you have an airy batter. 

​The dough should be soft but not sticky.

If it's sticky add 1 tbsp flour, if it's too dry add 1 tbsp water

Filling:

Blend all ingredients until smooth. 

  1. From the dough, form 25 small balls the size of a cherry tomato

  2. Flatten the balls   and fill the center with half a teaspoon of the filling

  3. Now close the dough around the filling and form a ball out of it again.

  4. Place the finished ma'amoul on a baking sheet and bake them for 20 minutes until the dough is golden brown. 

  5. Let the ma'amoul cool down and then dust with icing sugar

Ma'amoul can be stored in a cookie box at room temperature for up to a month.
